Green Eggs and Ham Breakfast

I read a study that said people trying to lose weight had more success if they ate two eggs for breakfast as opposed to bagels with the same amount of calories. That protein really has staying power. So I got out my mini-chopper, (the burro of my kitchen!) and poured two eggs, five broccoli florets, 1/8 cup of skim milk and a clove of garlic in the chopper. Whirred it until the garlic was smashed up and poured the mixture into a hot skillet sprayed with non-stick spray. Note to self, add salt the next time. The omelet turned out this pretty speckled green. I ate it with some fresh hot salsa and a couple little slices of honey ham. This was too bland because of the lack of salt. Obviously cheese would have been DELISH in it, but I wanted to try it without. Maybe you’ll like it.
