2 cups of fresh spinach leaves
1 hard boiled egg
1 Tablespoon of minced red onion
3 Tablespoons of dry roasted peanuts
freshly ground pepper
1 Tablespoon Ranch dressing drizzled over the top
This was outstanding. I gave it all a good toss so that there was some Ranch on most of the spinach leaves. I hope you enjoy it as much as I did. I feel full and satisfied.
The Spotlight is on me. In frightening detail. First of all, the link is to a youtube music video of Mute Math singing Spotlight. This song ROCKS and KILLS at the same time. Try not to move to the beat. Impossible. I have to type to the beat or bop my head or something. Now, try running to it. Without stopping. WHAT A WORKOUT! My hands are still shaking from my treadmill walk/run. Whew.
I finally decided to do it. I’m going to publish photos from the first twelve weeks of body shots. It’s scary. This isn’t for those seeking shots of prurient interest. This is a body sculpting exercise, and I’m still in the stage where the clay is kind of a lumpy mess on the wheel. And I’m okay with that. Please don’t judge too harshly. Or in fact, how about don’t judge at all? Hee Hee. I realize I need this photographic record of my attempt so that I don’t lose momentum. I started my second Twelve Weeks last week. It has been an uphill battle to get moving. Songs like Spotlight really help. And trying to see a difference in photos helps a little too. So I had to dink around with the order. The first one is actually the last one.
I just have a little pet peeve that I wanted to vent about. Photographic images of cupcakes drive me wild. I can almost taste the soft icing bubbling up over my top lip as my teeth bite into the cakey bottom part. Pictures of cupcakes make me insane for a cupcake. Now, I haven’t gone as far as driving somewhere to get one, or even whipping up a batch. (I really don’t enjoy baking. At all.) So instead, I feel like an addict going through rehab. I get the shakes. I sweat. My mouth waters. I daydream, but it just IS NOT THE SAME. So I wanted to return the favor, and put a lovely cupcake photo on here. Is it just me?

I got three really nice fresh chops at Aldi. About an hour before dinner, I sprinkled each one liberally with Mrs Dash (original flavor) and then doused them in red wine vinegar. Then all I did was fry them in Pam until browned on each side, lowered the heat and covered. They were fully cooked in less than ten minutes. Potato pearls and a spinach romaine carrot salad rounded out the meal. The Chops were unbelievably tender. Easily the best chops I’ve ever made. I have to credit the vinegar, I guess. Oh, sorry there’s no photo…we gobbled them up too fast.
Celebrated DH’s return by treating the family to CiCi’s Pizza Buffet.
It was so fun to go and relax and feed everybody. We dirtied up a ton of plates, and I don’t have to wash them. I know, I know, what about the big eating healthy thing etc? Well, I had lots of veggie pizza and spinach pizza and two helpings of salad, and only one small pop and one bite of the cinnamon roll, one bite of the sweet pizza. Then Dale came up to the table with a pudding-like slice of pizza. DH asked, what is that?
“Bavarian Cream Pizza.”
There went all my good intentions. Actually, I only had one slice. Ooh it was so fun. I must have had ten pieces of pizza. But they were all small, and I didn’t eat the crust. Some I didn’t even take more than a couple bites. My new theory is if I don’t absolutely love the taste, then why shovel it into my mouth?
